Rootbeer Float Cookies

Root Beer Float Cookies

A delicious reminder of a favorite summer time treat!

  1. Ingredients
  1. 1 cup butter, softened
  2. 2 cups packed brown sugar
  3. 2 eggs
  4. 1 cup buttermilk
  5. 1 tsp. root beer extract or concentrate
  6. 4 cups flour
  7. 1 tsp. baking soda
  8. 1 tsp. salt
Root Beer Frosting
  1. 4 cups powdered sugar (or icing sugar)
  2. 3/4 cup butter, softened
  3. 3 Tbsp. milk
  4. 1 tsp. root beer extract or concentrate
  1. Preheat oven to 375º.
  2. Using a large mixing bowl, mix butter and brown sugar until creamy. Add eggs, beating well after each addition.
  3. Beat in buttermilk and root beer extract. Combine dry ingredients; to creamed mixture.
  4. Drop by rounded teaspoonfuls onto ungreased baking sheet. (Sophie likes to use a scoop)
  5. Bake at 375º for 10-12 minutes or until lightly browned. Remove and cool.
  6. In a mixing bowl, combine all frosting ingredients. Beat until smooth.
  7. Frost cooled cookies.
