Rootbeer Float Cookies

Root Beer Float Cookies

A delicious reminder of a favorite summer time treat!

  1. Ingredients
  1. 1 cup butter, softened
  2. 2 cups packed brown sugar
  3. 2 eggs
  4. 1 cup buttermilk
  5. 1 tsp. root beer extract or concentrate
  6. 4 cups flour
  7. 1 tsp. baking soda
  8. 1 tsp. salt
Root Beer Frosting
  1. 4 cups powdered sugar (or icing sugar)
  2. 3/4 cup butter, softened
  3. 3 Tbsp. milk
  4. 1 tsp. root beer extract or concentrate
  1. Preheat oven to 375º.
  2. Using a large mixing bowl, mix butter and brown sugar until creamy. Add eggs, beating well after each addition.
  3. Beat in buttermilk and root beer extract. Combine dry ingredients; to creamed mixture.
  4. Drop by rounded teaspoonfuls onto ungreased baking sheet. (Sophie likes to use a scoop)
  5. Bake at 375º for 10-12 minutes or until lightly browned. Remove and cool.
  6. In a mixing bowl, combine all frosting ingredients. Beat until smooth.
  7. Frost cooled cookies.

Sophie’s Chocolate Chip Cookies


Sophie's Chocolate Chip Cookies

A tried and true favorite from The Cookie Jar

  1. 3/4 cup butter flavor Crisco
  2. 1 1/4 cup brown sugar
  3. 2 Tbsp milk
  4. 1 Tbsp vanilla
  5. 1 egg
  6. 1 3/4 cup all purpose flour
  7. 1 tsp salt
  8. 3/4 tsp baking soda
  9. 1 12oz pkg semi-sweet chocolate chips
  1. Preheat oven to 375 degrees
  2. Combine shortening (Crisco), brown sugar, milk, and vanilla in large bowl. Beat at medium speed with electric mixer until creamy. Beat egg into creamed mixture. In a separate bowl, stir together flour, salt, and baking soda. Beat dry ingredients into creamed mixture until just blended. Stir in chocolate chips.
  3. Drop batter by rounded teaspoons on ungreased cookie sheet.
  4. Bake for 10 minutes or until lightly browned.
